Analisis Kandungan Logam Timah (Sn), Timbal (Pb) dan Kromium (Cr) Dalam Buah Kemasan Kaleng Secara Spektrofotometri Serapan Atom

Buah-buahan olahan yang dikemas dengan kemasan kaleng yang bertujuan untuk memperpanjangan waktu ketahanan buah tersebut. Biasanya menggunakan logam berat sebagai bahan penyusun kaleng yaitu timah sebagai badan kaleng, timbal untuk peyambung tutup dan badan kaleng dan kromium untuk melapisi timah. Sehingga perlu diperhatikan keamanan dan pengaruhnya terhadap buah kemasan kaleng. Penelitian ini dilakukan untuk mengetahui kelayakan buah kemasan kaleng untuk dikonsumsi dan membandingkan hasilnya dengan ketetapan peraturan badan pengawasan obat dan makanan nomor 9 tahun 2022. Sampel berupa buah peach kemasan kaleng, buah kelengkeng kemasan kaleng dan buah leci kemasan kaleng. Sampel diambil secara acak di Pekanbaru dengan variasi kadaluarsa yang berbeda. Sampel dianalisis dengan spektrofotometri serapan atom. Konsentrasi logam timah pada PKK 1, PKK 2, KKK 1, KKK 2, LKK 1 dan LKK 2 secara berurutan 209,90 mg/kg, 190,13 mg/kg, 151,75 mg/kg, 86,75 mg/kg, 250,57 mg/kg dan 116,19 mg/kg. konsentrasi logam timbal hanya terdapat pada KKK 1,KKK 2 dan PKK 2 masing-masing sebesar 0,042 mg/kg, 0,0083 mg/kg dan 0,11 mg/kg. Kandungan logam kromium dalam sampel secara berurutan yaitu 0,36 mg/kg, 0,42 mg/kg, 0,80 mg/kg, 0,21 mg/kg, 0,22 mg/kg dan 0,52 mg/kg Buah kemasan kaleng yang memiliki kadar logam melebihi ambang batas yaitu logam timah pada sampel LKK 1, logam timbal pada sampel PKK 2, dan KKK 2 serta kromium dengan sampel PKK 1, KKK 1 dan LKK 2. Disimpulkan bahwa buah kemasan kaleng tidak layak untuk dikonsumsi. Karena melebihi batas ketentuan peraturan badan pengawasan obat dan makanan nomor 9 tahun 2022.
